This Sauvignon Blanc comes from the valley in the Golan Heights. After receiving the grapes at the winery, they are gently squeezed, early in the morning when the fruit is cold. The juice undergoes fermentation in stainless steel tanks at different temperatures to obtain a wider variety of flavors. The wine is not aged in wood to maintain its delicate fruit profile and does not undergo malolactic fermentation to maintain crisp acidity. After fermentation, the wine is shaded, filtered, and bottled. A wine with a distinct Sauvignon character of grapefruit, passionfruit, tropical fruit, and a little herbaceousness. It is a light wine with fresh aromas and balanced sourness and it provides a pleasant experience with every sip.
