We pick the etrogs varieties at the beginning of the season, when their color ranges from green to yellow.
This is the best way to get rich and fresh aromas.
The etrogs are ground whole and sent to ferment at cold temperatures.

The Jullius Distillery was founded by Joov, a former media man, and alcohol restaurant critic, who decided to turn from a theorist into a man of action and produce alcohol himself. The distillery is today in Kibbutz Hanita, in front of an intoxicating view, where Joov produces grape grappa produced at the German refinery and also fruit schnapps such as mandarins, oranges, and citrons.
